Colored a vibrantly deep garnet red, the Castelle has an intense nose. The floral bouquet abounds in notes of violets and dried roses, delicately layered with aromas of raspberries and almonds with a hint of toast. Full on the palate, in both body and flavor, the balanced and supple wine has a generous, delicate finish. An ideal accompaniment to red meats, roasts, and game, this wine would pair well with any decidely flavorful dish. The must is fermented in a temperature-controlled tank, with a 10-12 day period of maceration. The wine is pumped over daily for more thorough fermentation as well as better color extraction. The wine is aged for 24 months in barriques, then cellared in bottle for one year before release.
