Colored an intense, garnet red, the fruity nose on the 'Osso San Grato' overflows with powerful notes of black cherry, dried rose, and violet, with complexity added by a distinct note of tar. Intensely flavored to match, the full-bodied Gattinara is austere and yet generous, with sweet and velvety tannins balanced by a long finish. The grapes, grown in sub-acid morainic (soils originating from an ancient glacier) and volcanic (rich in minerals) soils with a southern exposure, are all hand-picked. After being delicately pressed they are left to ferment with a 14-16 day period of maceration on the skins as the must is pumped over with automatic sprinklers.
