The last disgorgement was one of the loveliest wines I'd ever tasted from Margaine. It's still on the market as I write (in April '08) and is so pretty you feel your palate stand up so that it can swoon back down. This one's a 1/08 disgorgement, and all it needs is time. It's 60% 2005 and all the Pinot Noir (all 10% of it) is 2005; the reserve wines (all Chardonnay) hail from '04-'03-'99-'96; it's a creamy elegant wine, more like a mini-Club than the Riesling-like fizz it's sometimes been; again this striking clinging length. High hopes here, and I like the stylistic shift into a more classical idiom. Violet and hyacinth aromas make you think of Riesling (as these wines often do), but the palate is all apples and Rainier cherries with a chalk-powder sprinkle; wonderfully silky and generous, refined and accurate. Same cuvee as the Brut N.V. only with more sweetness (28 g.l. this year, drier than last year); you feel flowers spring up on your palate. Lots of canteloupe, and paradoxically it seems even more refreshing than the dry N.V. I mean, the fizz is delicious. Foie terrines yes we all know, but I rather envision this for unagi, for pan-Asian preps involving mango and other exotic fruits, for salads with lots of fruit and salt, maybe cantelope and lardons - even slaw. So get out on your deck with Margaine Demi-Sec! This is the same cuvee as the Brut N.V. only with 32 g.l. With all the patience of a saint, Chris Hoon the vineyard manager, has delivered truly complex and well ripened fruit. For that we can't thank him enough. I splurged my final night in Austria and stayed in one of Vienna's grandest hotels. I felt like a Sultan. At breakfast there was this deranged buffet from which I gnarfed an unseemly amount of food. Last year I asked Willi how he felt about Michi Moosbrugger's splendid bubbly at Gobelsburg; he said he loved it, of course, but was himself seeking another kind of wine. The name refers to Brundlmayer's trellising method, a Y-shaped system that looks as if the vine is throwing its arms up toward the heavens, says Willi. This system also more than doubles the leaf-surface exposed to sunlight and encourages quick drying of leaf and grape alike after a rain. Willi also wants to demonstrate you don't need old vines to make great wine. But there's more. Lyra is the wine of the sun, Says Willi, the brainchild. Whereas Alte Reben is the wine of the soil, the darker underground. You drink each wine with a different part of yourself. What a lovely thing to say. There's a restaurant I absolutely love, a scant hour northwest of Strasbourg deep in the hills of the northern Vosges; it's called L'Arnsbourg, has three Michelin stars and costs less than an average 1-star in Paris. The list is heavy in Alsace, as one might suppose, but I was struck by the presence of a '99 Heiligenstein Riesling from Brundlmayer, and ordered it pronto. For this wine, we use a fermentation method established for Champagne Cremant generations ago : when the still wine is decanted for its second fermentation in the bottle, less sugar and yeast are added than the practice would have it with straight forward Champagne. This SuperTuscan, predominately Sangiovese, has 5% Colorino blended into it. This second Tuscan indigenous grape gives a dark ruby red color to the wine. The nose is a delicate balance of fruit and oak, with scents of ripe berries, vanilla and coffee. It is full-bodied on the palate, impeccably balancing sweet tannins, wood and acidity with a long, fine finish. After harvesting the grapes in the middle of September, they are left in temperature-controlled rotofermenters for 6-7 days, then transferred to oak for malolactic fermentation. The vineyards are planted on steep terraces overlooking the Montsant river valley, just outside the village of Gratallops in the heart of the Prioriato D.O.C. The soil is classic Ilicorella - the schist that this region has become famous for. The Clos Figueres wine is 80% old vine Grenache and Carignan. Syrah, Mourvedre and Cabernet are added to this cuvee, as well. Microvinification takes place in 500-liter oak casks that are turned on their sides to create wide, shallow vats. This allows for regular hand pigeage and extended maceration on the skins. The wine ages for 13 months on a selection of new Allier oak barriques and casks that range from 225 to 300 liters. Wine maker notesClos Pegase grows Cabernet Sauvignon at our 40-acre Palisades Vineyard, nestled at the base of Mt. St. Helena, and the spare plot known as Graveyard Hill in Carneros. Both these vineyards, despite their dramatic climatic differences, share well-drained, rocky terrain that stress and concentrate the resulting berries. Little effort is required to extract the deep black color and lush tannin structure that are the birthright of these wines. Vinified with natural yeast, and left to macerate for several weeks on their dense skins, the resulting wines reflect the opulence and fine minerality that derives from their light yielding and exacting soils. After a long fermentation with the skin and seeds, the free-run juice is extracted and run off into small French barriques for two years or more of cellar age. The press wines are collected and sold in bulk, as the long maceration renders these wines too rustic to be blended into our Clos Pegase bottlings. Smaller aliquots of Cabernet Franc, Petit Verdot, Malbec and Merlot from our estate vineyards may be judiciously added to spice the palate or perfume the aromatic profile of our Cabernet blends. Ultimately, it is the alchemy of blending that is the signature of these wines. We are blessed in being able to blend richly tannic, naturally acidic Cabernet from Graveyard Hill with the preciously aromatic, but shorter, broader-textured wines of Palisades. The good news is that there are 1,500 cases of this blockbuster wine, which has a Bordeaux framework but the exuberance and richness as well as fruit purity of a great Napa wine. Deep purple in color with an extraordinary nose of scorched earth, blueberries, and black currants intermixed with some subtle charcoal notes, spice, box and spring flowers, it is very full-bodied, but beautifully structured and well-delineated. With good acidity despite what is an extremely high pH (3.9), the total acids are reasonable. This is a beauty of harmony, power, and great intensity, but it is light on its feet, and an exceptional example of what this high-elevation hillside estate vineyard is capable of producing.
